TO ALL THE KIDS WHO SURVIVED the 1930’s, 40’s, 50’s, 60’s and 70’s!!

First, we survived being born to mothers who smoked and/or drank while they were pregnant.

They took aspirin, ate blue cheese dressing, tuna from a can, and were not tested for diabetes.

Then after that trauma, we were put to sleep on our tummies in baby cribs covered with bright colored lead-based paints…

We had no child proof lids on medicine bottles, doors or cabinets and when we rode our bikes, we had no helmets, not to mention, the risks we took hitchhiking.

As infants & children, we would ride in cars with no car seats, booster seats, seat belts, or air bags.

Riding in the back of a pick up on a warm day was always a special treat.

We drank water from the garden hose and NOT from a bottle.

We shared one soft drink with four friends, from one bottle and NO ONE actually died from this.

We ate cupcakes, white bread and real butter and drank Kool-aid made with sugar, but we weren’t overweight because,

WE WERE ALWAYS OUTSIDE PLAYING!

We would leave home in the morning and play all day, as long as we were back when the streetlights came on.

No one was able to reach us all day. Moreover, we were OK.

We would spend hours building our go-carts out of scraps and then ride down the hill, only to find out we forgot the brakes After running into the bushes a few times, we learned to solve the problem.

We did not have Play stations, Nintendo’s, X-boxes, no video games at all, no 150 channels on cable, no video movies or DVD’s, no surround-sound or CD’s, no cell phones, no personal computers, no Internet or chat rooms…….

WE HAD FRIENDS and we went outside and found them!

We fell out of trees, got cut, broke bones, and teeth and there were no lawsuits from these accidents.

We ate worms and mud pies made from dirt, and the worms did not live in us forever.

We received BB guns for our 10th birthdays, made up games with sticks and tennis balls and although we were told it would happen, we did not poke out very many eyes.

We rode bikes or walked to a friend’s house and knocked on the door or rang the bell, or just walked in and talked to them!

Little League had tryouts and not everyone made the team. Those who did not had to learn to deal with disappointment. Imagine that!!

The idea of a parent bailing us out if we broke the law was unheard of. They actually sided with the law!

These generations have produced some of the best risk-takers, problem solvers, and inventors ever!

The past 50 years have been an explosion of innovation and new ideas.

We had freedom, failure, success, and responsibility, and we learned how to deal with it all!

If YOU are one of them CONGRATULATIONS!

You might want to share this with others who have had the luck to grow up as kids, before the lawyers and the government regulated so much of our lives for our own good.

While you are at it, forward it to your kids so they will know how brave (and lucky) their parents were.

Kind of makes you want to run through the house with scissors, doesn’t it?

Of course, our youth live for “Snow Days” - teachers, too! And once every five years or so, isn’t to bad…

For die-hard Southerners, snow belongs up North with temperatures below 40. We live here for the warmth and the sunshine. Like I said, we complain a lot! I love the    

South.  

See what can happen when you least expect it! Quite a surprise this morning, yet so beautiful… maybe this would be nice everyday for several months… naw, just for special Snow Days! It is light and fluffy, just the kind of snow you want, without any ice problems. So the children and the adults with their ‘child’ self will be out and about - throwing snowballs, making snow cream, and building snowmen/women (equal time)! 

So funny, for us to have actual snow on the ground it is a big thing - phone ringing with calls from friends making sure I know it’s snowing, emails coming in, everyone so excited… we are a funny breed, aren’t we?

This festive party dip with seven yummy layers can make any occasion a fiesta!

7 Layer Fiesta Dip

2 (8-ounce) packages low-fat cream cheese, softened

2 tablespoons taco seasoning mix (your favorite brand)

2 cups prepared guacamole (make your own or use ready-made)

2 cups tomato-based salsa

2 cups finely shredded iceberg lettuce

2 cups shredded cheddar cheese

1 cup chopped green onions

2 (2-ounce) cans sliced black olives

1. In a small bowl, mix together cream cheese and seasoning mix. Spread mixture evenly onto the bottom of a 13 x 9 x 2-inch glass dish.
2. Top the seasoned cream cheese with the guacamole, salsa, lettuce, cheese, onions and olives in layers.
3. Serve immediately accompanied with tortilla or corn chips.
4. Refrigerate any remaining dip.

Makes 20 servings.

Cook’s Note: If you like, reduce the recipe ingredients by half and use a 9-inch pie plate or quiche dish for a smaller party. Or DOUBLE recipe for larger gathering!

Nutrition Facts Per Serving (approximately 1/4 cup): 152.3 calories; 69% calories from fat; 12.0g total fat; 25.3mg cholesterol; 372.3mg sodium; 206.9mg potassium; 5.5g carbohydrates; 1.1g fiber; 0.7g sugar; 4.5g net carbs; 6.3g protein.

“PASS” the Beer Cheese Spread…

Beer Cheese Spread

4 cups (16-ounces) shredded mild cheddar cheese
4 cups (16-ounces) shredded sharp cheddar cheese
2 cloves garlic, finely minced
3 tablespoons Worcestershire sauce
1 teaspoon seasoned salt
1 teaspoon dry mustard
1/4 teaspoon hot pepper sauce
1 (12-ounce) can beer, at room temperature

1. In a mixing bowl
   

   , combine the cheeses with garlic; set aside to soften to room temperature.

2. Add the Worcestershire sauce, seasoned salt, mustard, hot pepper sauce, and enough beer to make a spreadable mixture.
3. Place in a crock or serving dish; cover and refrigerate for several hours or overnight before serving. Serve with an assortment of crackers, chips or crudites.

Makes about 8 cups.

Note: You’ll get the best results if you refrigerate the finished spread for several days to give the flavors more time to blend.
